Santas Favourite Sugar cookie

There’s something so comforting about a simple sugar cookie. the softness as it breaks, the gentle sweetness, and that buttery smell that fills the kitchen and instantly feels like a warm hug welcoming you home.  I can still remember standing in my grandmother Lely’s kitchen rolling out the dough and carefully cutting out shapes, my hand and face dusted with flour whilst she watched with a smile on her face and gentle guidance. I now do the same with my grandchildren in the hope that they will recall these moments with the fondness and love I do.

These are the cookies we shape with love and decorate with care. Whether it’s for a celebration or just a quiet afternoon with a cup of tea. Sugar cookies remind us that the simplest recipes often hold the warmest memories, bringing joy not through extravaganza, but through care, patience and a sprinkle of sweetness shared with those we love.

These bake beautifully, keep their shape, and are perfect for decorating with whatever festive cutters you have at home. Soft, sweet, and wonderfully Christmassy — let’s make the cookies that fill any house with joy.

  • Chilling is the key to neat shapes — don’t skip it.
  • Bake on the middle shelf to keep them pale and even.
  • These freeze beautifully (both dough and baked cookies).
  • Great for decorating with children or gifting in little Christmas tins.

Lely’s Touch

“There’s something magical in decorating cookies. Each one becomes a little Christmas treasure — made with gentle hands and lots of love.”

 

Ingredients

150 g unsalted butter, softened
150 g caster or granulated sugar 
1 large egg
2 tsp vanilla extract
300 g plain flour
Pinch of salt

Instructions

Cream the butter and sugar. Beat until pale and creamy.  A smooth base means smooth cookies.

Add the egg and vanilla. Mix in well until the dough looks silky and unified.

Sift together the flour and salt. Add to the bowl and mix until a soft dough forms. Don’t overwork — sugar cookie dough prefers a gentle touch.

Pre heat oven to 180°C (170°C fan oven).

Roll out the dough. Roll between two sheets of baking paper to 5 mm thickness.

Chill BEFORE cutting. Refrigerate the sheet of rolled dough for 15–20 minutes. This helps the cookies keep perfect, sharp edges.

Cut out your Christmas shapes. Use any festive cutters you love — snowmen, baubles, gingerbread men, stars…use a glass to cut out circles if you don’t have a cutter. Transfer carefully to a lined baking tray, and chill again for 10 minutes. Trust me this is essential to keep sharp edges and shapes.

IMPORTANT — For any re-rolled dough. Gather offcuts, gently re-roll them, then chill the dough again before cutting new shapes. This prevents spreading, misshaping, and stretching when lifting the cookies.

Bake for 8 to 12 minutes, keeping them pale with just a hint of golden brown around the edges. Cookies will continue to bake on the tray whilst they cool.

Cool for 10 minutes on baking tray before transferring to a wire rack to finish cooling. Once fully cooled they are perfect for decorating.

DECORATING IDEAS. Royal icing in colours you like. Melted chocolate either drizzled on top or sandwiched between two cookies. Sparkling sanding sugar. Edible glitter, pearls, sprinkles. Coloured fondant.

Flavour Variations: Add lemon or orange zest. Add almond extract for bakery-style sugar cookies. Add cinnamon, nutmeg, or mixed spice. Swap vanilla for peppermint extract.
