Carrot Cake Cookie

Is baking a carrot cake too much cake for you, but you still crave carrot cake? Problem solved. Simple carrot cake cookies. The perfect in-between bite.
Enjoy your carrot cake cookies with delicious cream cheese icing!

Ingredients

120 g grated carrots
100 g brown sugar
50 g granulated sugar
113 g unsalted butter, softened
1 egg
1 teaspoon vanilla extract
120 g plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
60 g chopped walnuts or pecans (optional)
ICING 115 g cream cheese, softened
55 g unsalted butter, softened
250 g powdered sugar
1 teaspoon lemon or orange essence. (vanilla works too)

Instructions

Preheat your oven to 175°C and line a baking sheet with silicone sheet or grease proof paper.

In a mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth.

Beat in the egg and vanilla extract until well combined.

In a separate bowl, whisk together the flour, bicarbonate of soda, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Fold in the grated carrots, chopped nuts (if using), until evenly distributed throughout the dough.

Drop tablespoonfuls of dough onto the prepared baking sheet, leaving space between each cookie, as they will spread.

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Icing Ingredients: In a mixing bowl, beat the softened cream cheese and butter together until smooth and creamy.

Gradually add the powdered sugar, mixing on low speed until well combined and smooth.

Stir in the vanilla extract until evenly distributed. If the icing is too thick, you can add a tablespoon of milk to reach your desired consistency.

Once the cookies have cooled completely, drizzle or pipe the icing onto the cookie. Optionally, you can sprinkle some chopped nuts or cinnamon on top of the icing for decoration. Allow the icing to set before serving.
