Oat Chocolate Biscuits

This is a really old recipe, one of the firsts  I found in my grandmother’s note books. I’m assuming that rolled oats were a staple in her kitchen as I found a number of recipes in which she used this, and not just for porridge.  However, hers were simply plain biscuits which I have no doubt were delicious, but I have since updated them with the addition of chocolate as a sandwich stuffing – you can really thank IKEA for this idea!!

This recipe provides for  a gorgeously crisply biscuit, sandwiched together with a chocolate and coconut oil stuffing. If you decide you want to sandwich your biscuits, then you need to make them thinner that your normal sized biscuits, however,  you can always make the biscuits slightly thicker and drizzle them with the chocolate and coconut oil mix instead of stuffing them. Either way Mmm Yums.

Suitable for afternoon teas, snacks or simply just because…, I’m sure you will enjoy these Oatty chocolate biscuits any time and any place.

Ingredients

3 ounces unsalted butter
1 1/2 cups rolled oats - not the instant type.
3 tablespoons plain flour
1 teaspoon baking powder
1 teaspoon Vanilla Extract
2/3 cup granulated or castor sugar
1 egg
Pinch of salt
FOR STUFFING OR AS A DRIZZLE: 200g Chocolate (Dark is usually used though I prefer milk) 1 tablespoon coconut oil

Instructions

Pre heat your oven to 180 C Fan oven.

In a medium sized pot melt butter over low heat. Remove from heat and add Oats, Flour, Baking Powder, Vanilla Extract and salt. Mix well and set aside.

In a separate bowl whisk the egg and sugar until pale and slightly increased in size - good 5 to 7 minutes.

Stir in the Oat mix and combine thoroughly.

Drops small balls of batter - 1 1/2 teaspoon in size if you are going to sandwich biscuits, or 1 tablespoon if you like a bigger chunkier bite - onto a prepared baking tray. Leave room between each biscuit as they spread a little. Make sure your dollops are all the same size so your biscuits look better when sandwiched together.

Bake for 6 - 7 minutes, or until the edges are golden brown. Remove from oven and let them cool directly on the baking tray for some 5 minutes before transferring onto a wire rack to cool completely.

Repeat the process for any remaining batter.

Melt the chocolate and coconut oil in the microwave, and mix to incorporate thoroughly. Allow to cool.

When biscuits are finally cooled down, dip the flat side into the chocolate mix, dip another and sandwich both sides together. Continue with remaining biscuits. If you have any chocolate mix remaining once all cookies are done, you can drizzle this over the top of the biscuits to decorate further. Biscuits are ready once the chocolate has set.
