Chicken in beer and orange sauce

 This is one of my favourite chicken recipes. Easy to make and so so tasty.
Unless you really like the taste of beer, use a blonde or light beer so that there is no bitter aftertaste. The orange juice will sweeten the sauce and balance the flavours perfectly.
This dish can be served with mashed potatoes, rice, pasta or whatever suits your taste.
Serve it up with company and pair it with a great wine. Enjoy.

Ingredients

3 whole chicken breasts
1 small carrot chopped
1 small onion chopped
1/2 Celery stick chopped
1 can blonde beer
Juice of one orange (around a 1/4 cup)
1 chicken stock cube or two teaspoon chicken stock powder
Flour for coating chicken
1 Bayleaf
Olive oil for browning chicken and sautéing veg
Salt and pepper

Instructions

Season the chicken breasts on both sides, and cut each breast into four or six pieces depending on the size. Coat each piece in the flour.

Heat some of the oil in a pan, and add the chicken pieces. Cook until the chicken is browned on all sides.

Remove chicken and if needed add some more oil. Add in onion, carrot and celery and sautee till translucent.

Add chicken back in, and add in the beer. Cook on high for a few minutes to evaporate the alcohol, and reduce to a simmer.

Add in the orange juice, Bayleaf and stock cube. Mix to incorporate and simmer for 15- 20 minutes until the chicken is cooked through and the sauce has reduced and thickened slightly. .

Serve with mashed potatoes, chips, rice, or with whatever you enjoy most
