Pancakes

Who doesn’t love a pancake breakfast? I find its one of the most versatile recipes you can have in your collection. If you like Lemon pancakes, add some freshly grated lemon zest to the mix. Cinnamon? add a pinch to the mix.  Orange? add some freshly grated zest to the uncooked batter. The combinations are endless, and once cooked, don’t get me started there, you can serve with honey, butter, cream, fresh fruit, frozen fruit……… I can probably come up with and indefinite amount of combinations all of which will taste fantastic.

With Shrove Tuesday just a couple of days away, most of us are heading to the supermarket to buy ready made pancake mix. You can make your own at a fraction of the price using ingredients which are probably already in your pantry.

This isn’t one of my grandmothers recipes, but it must have been given to me by a member of my family or hails from my school days, as this is in my old recipe notebooks, and I’ve been using this particular recipe for as long as I can remember.

I hope you make this, as its an easy recipe to follow and the results will wow your friends and family.

Ingredients

128g Plain flour
178 ml milk - use whichever milk you normally have on hand
1 large egg
1 teaspoon baking powder- this ingredient is essential for raised fluffy pancakes - do not omit.
1 tablespoon sugar
Capful vanilla extract
14 grams melted butter
Pinch of salt
1 teaspoon butter for the pan

Instructions

In a bowl add the flour, salt, baking powder and sugar. Mix to incorporate ingredients.

In another bowl, beat the eggs and milk to incorporate then add the vanilla and melted butter, beat for one minute

Make a hole in the centre of your dry ingredients and add your wet ingredients into this. Mix to just incorporated. If the batter appears to thick add a little more milk until you achieve a thick but still runny mix.

Melt 1 teaspoon of butter in a pan over medium heat. Add one ladle full of batter to the this to form the pancake.

Cook until you can see bubbles breaking in the surface of the pancake. The bottom of the pancake should be golden brown in colour. Around 3 minutes.

Flip with a spatula and cook for one more minute. Remove and place on a warming plate.

Repeat until you run out of batter. Add more butter to the pan if you need this.

Serve with you favourite toppings. Enjoy.
