Quick and Easy Apple Cake

I’m not too sure if this recipe was taken from my Grandmother’s cooking books, as the only version I have is in my handwriting. It could have been that I copied it out of her notebooks are some of them are really old and the writing is fading rapidly, but it could also have been given to me be a friend or work colleague. We had loads of apple pies and cakes growing up , especially in the summer time having tea at the beach, my one obsession, so this recipe could be one of hers.

Whichever it was this is a great quick and simple recipe that’s easy to make and tastes delicious. It pairs really well hot with ice cream, or cold with hot custard. It’s just as good on its own with a cup of coffee or tea .

I think that apples and cinnamon are one of those combinations that can never be beat, add that to the taste of a mild vanilla/ lemon sponge, and you have a winner on your hands.

I highly recommend you try this one, it will fast become your go to apple cake.

Ingredients

500g apples. Peeled and cored to this weight, then grated.
3 eggs - Large
200g unsalted butter or margarine - softened to room temperature
150 g granulated sugar
150g self raising flour
2 tablespoons vanilla sugar
1 teaspoon lemon juice
1 tablespoon ground almonds
Ground cinnamon to sprinkle over the top of the cake - 1 tablespoon

Instructions

Pre heat the oven to 180° C fan oven

Beat the 4 eggs in a bowl until thoroughly mixed.

Add the granulated sugar, vanilla sugar and ground almonds to the egg mix and whisk until soft and fluffy .

Then add the butter and mix to incorporate.

Add the flour and baking powder and mix to just absorbed, add the lemon juice and mix a little more.

Pour the mix into a greased 9 x 9 inch (25x25 cm) dish, at least one inch deep.

Arrange the grated apple on top of the cake mix and smooth out evenly throughout. Then sprinkle the cinnamon on top.

Bake in the middle shelf of your preheated oven for 35-40 mins or until a toothpick inserted in the centre of the cake comes out clean. If your cake is browning too much cover the top with some aluminium foil.

Allow to cool in the baking dish. Then cut into squares and serve.
